Ingredients

  • 1 small zucchini
  • 1 medium tomato
  • 1 medium potato
  • 1/4 medium onion
  • 1 tablespoon olive oil

Instructions

  1. Peel the zucchini and the potato, cut them in little cubs.
  2. Heat 1 tablespoon olive oil, add the chopped onion and simmer it. Add the diced potato and zucchini. Add 0,5 l water to the vegetables, season it with a little salt and cook it for 10 minutes on a medium heat, until the vegetables are softened. When the vegetables are cooked, pour off the water, the zucchini is watery enough to squash it.
  3. Meanwhile cut the tomato in little cubes, put it in a pan and start to cook it in own juice for 6-7 minutes on medium heat. When the tomato is softened, mash through a sieve and add to the zucchini.
  4. Puree the vegetables using a blender or food processor until is smooth. Serve it immediately!
