Ingredients

  • 150 g zucchini (1 small)
  • 1 medium banana
  • 1 medium apple
  • 2 eggs
  • 150 g minced oatmeal
  • 300 g almond flour
  • 2 tablespoons desiccated coconut
  • 3 tablespoons pumpkin seeds
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoon honey
  • 3 tablespoons erythritol
  • 50 g almond
  • 50 g dark chocolate (70 %) - optional

Instructions

  1. Peel the zucchini and the apple, then grate them using a cheese grater. Put them in a strainer to drip off the juice.
  2. In a large bowl mix the almond flour with the baking soda, baking powder, erythritol, pumpkin seeds, desiccated coconut and cinnamon.
  3. Mix the grated apple and zucchini with the banana and the crushed oatmeal, using an electric mixer, finally add the honey and the eggs. Then add the mixture to the dry mixture’s bowl, stir it thoroughly.
  4. Preheat the oven to 170°C/340°F.
  5. Line the cake pan with baking parchment paper. Pour the cake in the pan. Sprinkle the top with almond. Place the cake in the oven for 25-30 minutes.
  6. If you are not on a diet, you can spread the top of the cake with melted dark chocolate.
  7. Let it cool before serving!
