Pasta casserole with zucchini and chicken

Fresh and easy baked pasta casserole with zucchini, chicken and a lot of cheese, this creamy casserole could be a delicious quick dinner in a busy day.

You will need just a few ingredients: pasta, two zucchinis, chicken breast fillet, single cream and/or sour cream, garlic, cheese, olive oil and spices. I used a soured cream and single cream mixture, seasoned with salt, pepper and crushed garlic.

The recipe works well with just single cream, but since we are sour cream lovers, I could not omit the sour cream.

While the a pasta is cooking, sauté the zucchini chunks, then the a chicken breast in a large skillet. When everything is cooked, layer them in an ovenproof dish, pour the cream on top of the dish and place it covered in the preheated oven.

Bake the casserole for 15 minutes, then sprinkle the top with grated cheese, as taste.

Ingredients

  • 2 medium zucchini
  • 250 g chicken breast
  • 500 g pasta
  • 150 ml single cream
  • 150 ml sour cream
  • 2 cloves of garlic
  • 100 g grated cheese
  • 1 tablespoon olive oil
  • salt
  • pepper
  • paprika

Instructions

  1. Wash the chicken breasts and cut them into little chunks, season them with salt, pepper and paprika as taste.
  2. Wash the zucchini and dice it in the size of the chicken breast. Heat one tablespoon olive oil in a large skillet and sauté the zucchini cubes for 8-10 minutes, stirring occasionally. Season with a pinch of salt and pepper.
  3. Cook the pasta in boiling salted water, like is written on the package. When the pasta is cooked, drain it and put it aside.
  4. When the zucchini is ready, pour it in a plate and put it aside. Sauté the diced chicken breast in the same skillet for 7-8 minutes, until are white in all sides and cooked through.
  5. Preheat the oven to 200°C/390°F.
  6. Mix together the soured cream and the single cream, season with a pinch of salt and pepper, then mix it with the crushed garlic.
  7. Grease an oven-proof dish, then place the pasta on the bottom of the dish, then layer the cooked zucchini and the chicken breasts. Finally, pour the cream sauce on top of the dish. Cover the dish with foil and place it into the oven.
  8. Bake the casserole for 15 minutes covered, then remove the foil and sprinkle the top of the dish with grated cheese and bake for another 5 minutes or until the top of the casserole is golden brown.
