It was a long day, I've just arrived home and I've already started to cook something for dinner. In lack of time, I wanted to prepare something quick and easy but also tasty, then this zucchini and tomato pasta just dropped in my mind. I read a lot of recipes with zucchini, tomato and pasta combination and in my fridge has all of the ingredients, so I decided to prepare this easy vegetarian dinner at our taste.

All you have to do is just simmer the vegetables on olive oil, sprinkle them with basil, combine them with single and sour cream and finally with the cooked pasta. Cheese lovers can sprinkle the top of the dish with parmesan or any other cheese.

Ingredients

  • 2 medium zucchini
  • 3 tomato
  • 4 cloves of garlic
  • 400 g pasta
  • 100 ml soured cream
  • 200 ml single cream
  • 1 pinch of sugar
  • 3 tablespoons olive oil
  • 3-4 fresh basil leaves
  • salt
  • pepper

Instructions

  1. Chop the washed zucchinis and tomatoes into little cubes. Chop the garlic and the fresh basil.
  2. Cook the pasta in salted water like is on the package.
  3. Heat the olive oil in a wok or a pan, when it's hot add the chopped garlic and simmer it for 1-2 minutes stirring continuously, then add the zucchini. Season the simmering courgette with salt, pepper and basil, stir it occasionally.
  4. When the zucchini is almost softened, add the chopped tomato. Sprinkle the tomato cubes with a pinch of sugar and add to the zucchini, combine them together carefully. Simmer the vegetables for 5 minutes, but not more because the tomato will be too soft and will fall apart, then add the creams and stir them together.
  5. When the pasta is cooked, drain it, then stir carefully to the vegetable sauce. When it's combined perfectly, remove it from the heat and serve it immediately.
  6. Sprinkle the top of the pasta with grated cheese to taste.
