Ingredients

  • 1 zucchini
  • 10 slices of bacon
  • 100 g cheese (with goat cheese is the best)
  • 2 tablespoons olive oil
  • 2 teaspoons thyme
  • salt
  • pepper

Instructions

  1. Cut the ends of the washed zucchini, then cut it lengthwise in 10 slices. Using a peeler makes it easier.
  2. Cook 1 l water, when it’s boiling put the zucchini slices in it and boil them 1 minutes, then filtrate it well. After that preheat 1 tablespoon of olive oil in a pan and add the boiled zucchini slices. Fry the slices 1-1 minutes on both sides.
  3. Preheat the oven for 210°C / 410°F.
  4. Cut the cheese into 10 equal slices.
  5. Lay down a slice of zucchini, put on it a slice of bacon and a slice of cheese, season it with salt and sprinkle it with pepper and thyme. Roll it up gently and pierce it with a toothpick.
  6. Roll up all zucchini slices and place them in an oiled baking pan. Bake the rolls for 10 minutes.
  7. Serve them warm or cold as well! Decor them with fresh parsley and thin slice of carrot.
