It was a long day, I wanted to prepare for dinner something easy and quickly with fresh vegetables. I found in my fridge zucchini and peas, then when I was looking for a simple recipe, I decided to prepare this easy recipe - I've made a couple of modification.

I prepared my pasta with bacon, zucchini, peas, garlic, soured cream and cheese. My zucchini has stayed in my fridge for a while, it was a little yellow, so I had to peel it, but it was still tasty and crunchy.

Fry the bacon with the zucchini, peas garlic and spices for 20 minutes or less, until the vegetables are cooked, but still crunchy. Then combine it with the pasta, cream cheese and soured cream and it's ready. It took me just 30 minutes to prepare this fresh delicacy.

If you are cheese-addict, like us, sprinkle the top of the dish with grated parmesan or cheddar. Serve the zucchini and peas pasta immediately and wait for the compliments.

Ingredients

  • 400 g pasta
  • 2 medium zucchini
  • 2 cloves of garlic
  • 4 slices bacon
  • 150 g green peas
  • 200 g cream cheese
  • 3 tablespoons soured cream
  • 1/2 teaspoon basil
  • salt
  • pepper
  • 1 tablespoon olive oil

Instructions

  1. Cook the pasta in 2 l water and a pinch of salt.
  2. Chop the bacon and the garlic and put them in a deep pan, add the olive oil and cook them, stirring occasionally.
  3. Slice the zucchinis in thin slices, add them to the frying bacon. Add the peas as well. Season with salt, pepper and basil.
  4. Cook them for 15 minutes, stirring occasionally.
  5. Add the cooked pasta to the zucchini-bacon mixture, stir it well, then add the cream cheese and 2-3 tablespoons soured cream to make it creamier. Cook them for 2-3 minutes.
  6. Serve immediately.
