Zucchini noodles with chicken breast sauce

First let's prepare the "Zoodles"! Using vegetable spiralizer you can prepare quickly fabulous zucchini noodles. This time I prepared zoodles using a vegetable peeler and a sharp knife.

With just a few ingredients, you can prepare quickly something delicious. You need just chicken breast, onions, spices and the courgette noodles.

Cook the chicken breast with the onion and spices. Cook the zoodles with a little balsamic vinegar. That's it! Just place them on a plate and the dinner is ready.

Ingredients

  • 3 large zucchinis
  • 500 g chicken breast fillet
  • 1 red onion
  • 2 fresh green onions
  • 1,5 tablespoons balsamic vinegar
  • 1/2 teaspoon paprika
  • salt
  • black pepper
  • paprika
  • 4 tablespoons olive oil

Instructions

  1. Cut both sides of the courgettes. Peel the washed zucchinis. If you want your noodles to be colourful and healthier keep the peel on. My zucchinis were fresh, so I kept the peel on. You can make long thin ribbons using a vegetable peeler or mandolin and you can cut in thin noodles using a sharp knife.
  2. If you want to save time, use a plastic spiral vegetable slicer. Place the whole zucchini in the spiral slicer, twist the handle and the other end will fall out the curly noodle.
  3. Dice the chicken breast fillets, season with salt, black pepper and red pepper. Chopper the red onion and the green onion. Heat the half of the olive oil in a pan, add the white part of the green fresh onion, simmer it for 2 minutes, then add the chicken breast cubes. Cook the meat until becomes white, stir it, add the red onion and the green part of the onion. Cook it for 5 minutes.
  4. Meanwhile heat 2 tablespoons of olive oil, when it's hot add the zucchini noodles. Is important to do not add salt to the zucchini before cooking, because the cooked noodles will be too softened. After 4 -5 minutes of cooking season it with salt and pepper and add the balsamic vinegar. Cook for 2 minutes and the courgette noodle is ready.
  5. Serve the zucchini noodles with the chicken breast sauce. The dish will be more delicious if you grate a little goat cheese on top of the noodles.
