Ingredients

  • 2 zucchinis
  • 1 cucumber
  • 500 g tomato
  • 1 red onion
  • 200 g feta cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon lemongrass
  • salt
  • pepper

Instructions

  1. Cut the washed zucchini into thin slices, season it with salt, pepper and oregano. Heat the olive oil in a pan, then fry the courgette slices for 4-5 minutes. Fry both sides, until are softened.
  2. Meanwhile cut the tomatoes and cucumber in little cubes, then add the chopped red onion. Stir the vegetables in a large bowl, season with salt and pepper, then crumble the feta cheese.
  3. When the zucchini is ready, add to the vegetables, sprinkle it with shredded lemongrass.
  4. Put in the refrigerator for 30 minutes before serving.
