Ingredients
- 2 zucchinis
- 1 cucumber
- 500 g tomato
- 1 red onion
- 200 g feta cheese
- 1 tablespoon olive oil
- 1/4 teaspoon oregano
- 1/4 teaspoon lemongrass
- salt
- pepper
Instructions
- Cut the washed zucchini into thin slices, season it with salt, pepper and oregano. Heat the olive oil in a pan, then fry the courgette slices for 4-5 minutes. Fry both sides, until are softened.
- Meanwhile cut the tomatoes and cucumber in little cubes, then add the chopped red onion. Stir the vegetables in a large bowl, season with salt and pepper, then crumble the feta cheese.
- When the zucchini is ready, add to the vegetables, sprinkle it with shredded lemongrass.
- Put in the refrigerator for 30 minutes before serving.
