A fresh salad could be a perfect dinner or a perfect side dish. I prepared a healthy zucchini salad with yogurt dressing next to the traditional Hungarian course dish, the paprika potatoes. This potato dish is a paprika based potato stew prepared with smoked sausage, it's very delicious and hearty but has a lot of calories as well. The zucchini salad has just five ingredients: zucchini, greek yogurt, olive oil, lemon juice and fresh herbs. My salad was seasoned with freshly chopped basil and thyme.

The particularity of this salad is the zucchini is grilled. Just slice the courgette into thin slices with a mandolin, then grill them for 5 minutes. When the grilled slices are cooled, just mix them with the greek yogurt, basil, mint, lemon juice and season to taste.

Ingredients

  • 4 medium zucchinis
  • 2 tablespoons olive oil
  • 300 ml Greek yogurt
  • 1/2 teaspoon freshly chopped basil
  • 1/2 teaspoon freshly chopped thyme
  • a few drop of lemon juice
  • salt
  • pepper

Instructions

  1. Slice the washed zucchinis into thin slices using a mandolin slicer.
  2. Preheat 2 tablespoon olive oil in a large pan, when the oil is hot, add the zucchini slices and fry them until the grill marks appear. Grill both sides of the courgette and season them with salt and pepper.
  3. When the slices are grilled, put them in a large bowl and let them cool.
  4. While prepare the dressing: mix the greek yogurt with the freshly chopped basil and thyme, season it with salt to taste and add a few drops of lemon juice as you like.

Ingredients

  • 1 kg potato
  • 200 g smoked sausage
  • 1 red onion
  • 2 cloves garlic
  • 3 tablespoons oil
  • 3 teaspoons paprika
  • 1/2 teaspoon chili (optional)
  • salt
  • pepper

Instructions

  1. Cut the peeled potatoes in little cubes, slice the sausage into thin slices and chop the onion and the garlic.
  2. Preheat the oil in a large pan, then add the chopped onion. Sauté it for 4-5 minutes.
  3. Add the sliced sausage and cook it for 3-4 minutes, then add the diced potato Stir it well.
  4. Take the pan off the heat, sprinkle it with 3 teaspoons paprika, stir it well, then pour water into the pan to cover the potatoes, put the pan back on the maximum heat until it starts to boil. Season it with salt and pepper. When is boiling, reduce the heat and cook it for 30 minutes, until the potato is tender.
  5. Stir it occasionally, but keep the potato cubes from breaking apart.
  6. Serve it warm with fresh bread and soured cream.
